Lavender Collins
Ingredients:
- 2 ounces faux gin
- 1 ounce lemon juice
- 1/2 ounce lavender syrup
- sparkling water
Instructions:
The Drink: Add faux gin, lemon juice and lavender syrup to a cocktail shaker with ice. Shake until cold, and then strain into a glass filled with ice. Top with a splash of sparkling water and stir gently. Garnish with lemon slices and lavender sprigs.
Lavender Syrup: Bring to a boil a half cup of water and quarter cup of lavender in a sauce pan. Simmer for 3 minutes, and then remove from heat to steep for 20 minutes. Strain out flowers and discard.
In a fresh saucepan, add a half cup of sugar and three tablespoons of water. Bring to a boil while stirring to dissolve the sugar. Simmer for 3 to 4 minutes, and then stir in lavender liquid. Whisk until fully combined, remove from heat, and transfer to a storage container.
